On the salt-carved coast just outside Marsalforn, the Cini family has worked the Xwejni salt pans since the 1860s. Fifth-generation salt farmer Josephine Xuereb and her father Manuel — 'Leli tal-Melħ', the salt man — still sweep the crystals by hand each summer week, weather permitting.
