Ta' Pavia have been making qubbajt — Maltese nougat — in Żabbar since 1993. The soft nougat comes in a long run of flavours: almond, pistachio, prickly pear, carob, fig and walnut, orange, strawberry, banana, chocolate, vanilla, and mint with almonds. The brittle caramel nougat is the traditional Maltese one, dense with peanuts and sesame. They make it all from natural ingredients, they say, and through the feast season their stall goes up in the towns and villages holding their patron saint feast, where they hand you a piece to taste before you buy anything.
Their feast stall carries a banner that reads Iż-Żabbari Ħawn.
